As part of my decision to pay attention to my health and wellness, I try to start my day with some quiet time for meditation and reflection; just a few minutes of reading and thought with my cup of hot tea. If my schedule permits I try a light work-out with a combination of stretching and mat Pilates that seems to hit the right note to begin another busy day (again just a few minutes – enough to get my body and mind in balance).
Then, to pay attention to the not-so-small details about healthy nutrition and a good start, I take ten minutes to whip up a breakfast that will sustain me no matter what the rest of the day brings. Try this and see if it doesn’t work for you, too:
Ingredients:
½ small zucchini ½ small tomato 1 teaspoon olive oil ¼ cup Egg Beaters Louisiana-style red hot sauce (optional) Sargento® Artisan Blends™ Shredded Authentic Mexican Cheese 1 flour tortilla

Chop the zuchini and tomato into small pieces (you be the judge of how finely you want them to be chopped). Warm the olive oil over medium heat. Place the zuchini and tomato in the pan and lightly saute. Add 1 (or more to taste) drops of hot sauce (optional – but I love it!). Add Egg Beaters. Add cheese (amount to taste). Cook until desired firmness. Salt to taste. Place in tortilla and roll (or fold). Treat yourself to the delicious, healthy breakfast you need and deserve.
I find that this burrito gives me the fuel to arrive at work energized, and I don’t have the mid-morning crash that a Latte’ or doughnut gives me.
