On a typically hot August night, a special group of grown-ups responded to an invitation to spend an evening at the BLT Steakhouse in the (newly) posh Camelback Inn in Scottsdale to enjoy an evening of whisky (more about the spelling later) and fine dining. The event was designed to showcase the new Maker's Mark 46 the only really new bourbon produced by the Happy Hollow, KY company since its inception.
This very special evening of bourbon was noteworthy because Chef Marc Hennessy created a four course menu paired with Maker’s Mark and Maker’s 46 Cocktails created by Director of Beverage Trudy Thomas. |

Alrighty then! As promised when I shared my Tex-Mex Pie recipe, this little ditty will feed you for a week (or longer if you freeze some portions). And, unlike the one-dish Tex-Mex Pie, this one requires some work, utensils and a favorite appliance. I like to think of this as one of my best cook-for-the-week extravaganzas!

Necessity is the mother of invention, and that’s never more true than when you’re home alone, it’s late and you haven’t eaten since lunch. The other night, by the time I got home, took my precious Moochie out so he could stretch his legs (and do his “business”) and jumped into my sweats, it was late and I was beyond hungry. But, being as detail conscious as I am, I knew better than to break open a bag of cookies and munch the hunger away. With the cookie bag nutrition label flashing before my eyes I went to the pantry, determined to pluck some ingredients that were healthy. And why not? A few minutes of care and preparation would leave me much more satisfied than the cookie splurge. I knew I wanted some protein, vegetables and energy-producing pasta.
