Makers Mark 46On a typically hot August night, a special group of grown-ups responded to an invitation to spend an evening at the BLT Steakhouse in the (newly) posh Camelback Inn in Scottsdale to enjoy an evening of whisky (more about the spelling later) and fine dining. The event was designed to showcase the new Maker's Mark 46  the only really new bourbon produced by the Happy Hollow, KY company  since its inception.

 

This very special evening of bourbon was noteworthy because Chef Marc Hennessy created a four course menu paired with Maker’s Mark and Maker’s 46 Cocktails created by Director of Beverage Trudy Thomas.

Details For Lunch

green saladI pay attention to details. Details at work, details at home and, for sure, details of my health, my nutrition and my wellness. And certainly details about lunch. For me, lunch can be the most important meal of the day. That is why, when I am able, I pack my lunch 5 days a week. And that is why the lunch is a salad. When I bring my salad to work I ensure that my highly-charged day has a 20 minute interlude of flavor and health.  This is no small thing if you work in the type of office like I do where a positive, relaxing interlude is very rare. A delicious, healthy salad 5 times a week (at least) means that about 25% of my food intake is good and good for me. And that is hard to do with my bumper-to-bumper schedule.

 

So, with that in mind, here is my basic lunch plan for a typical work week. With lots of details included!

Don’t Let the Road Food Kill You

Road Food - Chicken, Waffles, and Diner FoodI just returned to The Valley-of-the-Surface-of-the-Sun from a 3-day road trip to Chicago and Muscatine, Iowa. (That’s correct. Muscatine, Iowa. It is a very pleasant town just 206 miles Southwest of Chicago. Getting there involves a rental car and three and one half hours of your life that you’ll never get back. Nothing but corn as far as the eye can see … and then some. But, as I said, at least Muscatine is a very pleasant town.)  At any rate, this road trip reminded your loquacious lupine scribe that traveling and eating right can be a real challenge. Forget about Jet Lag. The real worry when you travel is Menu Lag.

As I’ve said here before, I try to walk a spiritual path on my journey through this life. Life is rich in joy and bliss, pain and sorrow. How divine! So why do I sometimes find myself hungry, angry, lonely, tired, staring at my laptop 3 AM and eating Blue Bell Groom’s Cake ice cream out of the carton? The answer is painfully obvious. The irony is also painfully obvious.

 

I am obsessed with maintaining a healthy lifestyle. Heck, the whole purpose of TheHungrySingle.com is to help single adults who live alone to make healthy food choices. How you define  healthy is up to you. I use a broad definition that includes a wide variety of quality food choices. Sometimes the variety leads to conflict. Which brings me to a real guilty pleasure – not to mention comfort in times of trial – ice cream.

Guiltless breakfast burritoAs part of my decision to pay attention to my health and wellness, I try to start my day with some quiet time for meditation and reflection; just a few minutes of reading and thought with my cup of hot tea. If my schedule permits I try a light work-out with a combination of stretching and mat Pilates that seems to hit the right note to begin another busy day (again just a few minutes – enough to get my body and mind in balance).

New Mexico Green Chili Stew

Green Chili StewYou may have noticed by now that I am a Southwest kind of guy. That is due in no small part to the fact that I am from Texas. I grew up with Tex-Mex, Texas and Southern cuisine as well. But over the years I have really come to enjoy Southwest cuisine. Geography is only fanning the flames of my Southwestern palate. I currently reside in the Valley-of-the-Surface-of-the-Sun or, as most people know it, Phoenix, Arizona. So there is no escaping Southwest cuisine here (nor will you find a truly authentic Tex-Mex restaurant here -- but that’s a whole ‘nother story).

In order to have leftovers to enjoy for lunch, dinner, a snack or (depending on your outlook) breakfast, you must first prepare and cook enough food to put away for later enjoyment. Being a (happily) single guy I will cook on a weekend and then feast on the leftovers during the week ahead. There are several approaches to this endeavor ranging from traditional meals like my world famous grilled pork chops with roasted potatoes (and my from scratch mango-apple sauce) to more single-friendly, one-dish wonders like my version of the traditional Texas classic the Fritos® Pie (or as some call it the Tex-Mex Pie).
